I know I’ve talked about this in earlier articles but I want to refocus on this important marker of health. Acute inflammation happens in the body at a localized site where something, usually unpleasant, has caused some sort of harm. A bee sting or a sprained ankle are examples. The sting will redden, a sprain will swell, as blood flow is increased to the area to start the healing process. Once healed, the acute inflammation subsides. Chronic inflammation is caused by relentless day to day, year to year irritation.
Here is the big message: Chronic inflammation has been shown to be linked to many of the chronic diseases we are now overcome with; heart disease, cancer, and dementia to name a few. We have been told via conventional wisdom that saturated fat which raises cholesterol causes heart disease since the 70’s. There is no science to support this but there is science to support excessive sugar and simple carbohydrates DO cause chronic inflammation! The low fat conventional diet we’ve been told is healthy for 40 some odd years is killing us – slowly. Another “food” in the modern diet that is a concern are industrial “vegetable” oils. Examples are soy, canola, and sunflower seed. They are in most highly processed foods that come from big food companies like Kraft and Unilever. It’s good to become a food label checker because this stuff is in everything. These oils that are high in omega-6 fats throw out the balance of omega-6 to omega-3 fat in the body. This ratio in a healthy diet should be 1 to 1 or 2 to 1 but in today’s low fat world the ratio is more like 20 to 1. Both of these omega fats are essential, it’s the ratio that is problematic. Vegetable oils are recommended because of their LDL cholesterol lowering ability but we now know that this is no longer considered a health risk. These oils have now been linked to many chronic diseases and are toxic when heated. Cook with a stable saturated fat like avocado oil, coconut oil or lard.

So Olive Oil is now off limits??

Of course not. Please read the whole article. Olive oil is really good for you but not the best to cook with as it has a low smoke point. I simply pointed out what I recommend for cooking/heating.
